Banana Protein Popsicles

These creamy popsicles combine the sweetness of ripe bananas with the added nutritional boost of Pounamu Protein powder, making them the perfect frozen snack!

INGREDIENTS:

Peanut butter shell:

  • ¼ cup peanut butter
  • 1 tablespoon coconut oil

Chocolate shell:

  • ½ cup dark or semi-sweet chocolate chips
  • 1 tablespoon coconut oil

    METHOD:

    1. Put all of the ingredients into a blender and blend. Add any of the optional ingredients to the mixture.
    2. Evenly pour the mixture into the popsicle molds. Tap the filled popsicle molds on the counter to remove air pockets. Insert popsicle sticks.
    3. Freeze the popsicles for a minimum of 4 hours or overnight.
    4. After the popsicles are frozen and you’re ready to make the shells, line a baking sheet with parchment paper. 
    5. In a microwave-safe bowl, melt the peanut butter and the coconut oil in 20-second intervals until completely smooth. Do the same with the chocolate and the coconut oil for the chocolate shell in a separate bowl.
    6. Remove the popsicles from the freezer and quickly dip the popsicles into the shell mixture and cover with the decorative chocolate chips or the crushed peanuts. 
    7. We like to use the opposite shell flavor to drizzle over the popsicle - for example, if we dip the popsicle in chocolate, we drizzle with peanut butter!
    8. Set the popsicles on a parchment-lined baking tray and freeze for another 30 minutes.
    9. Your popsicles are ready - enjoy!!

    NOTES:

    • Popsicles are good for up to two months in the freezer, either in their mold or an airtight container.
